If it's a Chinese model, the chinese input method and display are
hard-coded as part of the ROM and can't be deleted. That's why the
chinese models only have 9mb of internal memory as opposed to 12mb on
the european/american versions.

I went to the language selection and there was "UK English" and "Hong
Kong Chinese" - I tried to delete the chinese, but while the button
would work, it wouldn't delete it - even after restarting the phone.

I also went into text input - primary input is "chinese" or "none" -
great, not even an option for english! Oh well, if anyone knows
another way I would greatly appreciate it!

I'd say go back to where you bought it - this is an 802...
