Signal Bar

I just started using the z500a and have the 64K sim in it, with this
sim I can't choose what Network I connect with or add a new one, the 64K
sim disables that feature.
Because the phone is always looking for the best signal my signal bars
are going up and down, sometimes to one bar and other times they go and
turn to yellow then back to green again.
I'm loosing signal strength because the sim is sending me to an AT&T
tower, why do the bars turn yellow?
The manual is in B&W and doesn't discuss this at all.
