I try'd to sett up a GMX-Mailaccount with the T610
where the mailbox username is name@gmx.net _but_
I find no way to enter this @ in the "MAILBOX"-Field
of the T610.
Any hints ?

Well, on my VodafoneLive! version, which has a field for an email
address, I press the '1' key twice or the right-hand menu button has
Symbols which works for all text entry fields (the menu may just be
called More which has a sub-menu with Add Symbol in it).

For some strange reason you need to press the zero "0" key to make that, and
a few other characters, accessible in the mailbox field.

Assuming the T610 is the same as the T616, pressing one contains the @
symbol. I think you must press it twice.
