I'm a bit of a mobile phone novice. When I receive messages I only see the
incoming mobile phone number and not the person's name. How can I change
this in my phone. Can anyone help me with this?

On my StarTAC the incoming text message displays the person's name if
they are in the StarTAC's phone book, otherwise it will display the
number. Do you have number preference turned on? That makes the
phone display the incoming number even if it is in your phone book.
On a StarTAC 7868W, you can check that setting by pressing:
FCN 1 STO * *
The display should say "Number Prefer Off". You can change the
setting by pressing the center side button.

On much more modern Motorola phones the only option is to link a number
to an alphabetic name the user has hand-entered into the phone. There
is no option for "Caller ID Name and Number" as we know it from landline
phones.
I suppose this might have been a matter of CDMA getting "Caller ID Number"
before landlines and never advancing when the landline SS7 protocols got
"Caller ID Name" added.
